Refined Sugar Free Banana Bread:
Ingredients :
2 Mashed Bananas
1 ½ Cups Flour (regular or GF)
2 Eggs
⅓ Cup of Melted Butter or Coconut Oil
⅓ Cup Maple Syrup
¼ Cup Natural Yoghurt
1tsp Baking Soda
½ tsp Baking Powder
1tsp Vanilla Essence
Preheat the oven to 180C.
- Mash Banana in a large mixing bowl.
- Beat eggs and add to the banana mixture along with the maple syrup, vanilla and melted butter.
- Add yoghurt, baking soda, baking powder and mix. Finally, sift the flour in and gently stir to combine.
- Line loaf tin with silicone baking mat or baking paper. Pour in mixture and bake for 50 mins.
Optional extras: add ½ cup of blueberries into your mixture
Storage: Keep in an airtight container for up to three days or freeze for up to 3 mths.
